I heard Delia speak at Gaia retreat almost 2 years ago. I had previously considered myself to be a healthy eater, but nevertheless prone to lack of energy and mood swings. Having observed Delia’s energy and glowing complexion at her talk, my intuitive response was “can I have some of whatever she is on?!” I found myself hanging on her every word as she revealed in scientific yet very accessible terms how we are what we eat and many of our eating habits are damaging our well-being.
Delia opened my eyes to a wide range of nutritional issues that are so important to ongoing good physical and mental health. She has had an enormous influence not only in my choices of foods but in how they are prepared. I was shocked to learn how heating some oils can dangerously change their structures and have since modified my habits to avoid this.
Particularly as a parent, Delia has helped me become aware of how critical a correct nutritional balance is for childrens’ developing minds and bodies. This was also supported by a pediatrician friend of mine commenting (in response to my husband’s skepticism of organic produce) that “for the sake of your children you should be buying organic.” I also had not been aware of the importance of the omega oils to brain function, and have noticed a very positive effect as a result of adding these to my family’s diet. (Even my dog’s eczema has cleared!)
I find that my enjoyment of cooking and eating has been enhanced by a greater awareness of the nature of food, and likewise my enjoyment of unhealthy foods has diminished. I have observed that my energy levels and concentration are less prone to fluctuations, and I no longer have the carbohydrate cravings and subsequent “crash” that I used to.
