‘Having recently spent a life-changing 5 days at Gaia Retreat I felt it was imperative to share my thoughts on the value of the talk given by Delia McCabe. I admit to being only slightly curious to hear what she had to say when I turned up to the session – being a food professional, we think we know it all – but was completely blown away by her knowledge and insight. What I came away with from that talk will stay with me always – how she crammed so much amazing and thought-provoking information into that hour and a half is beyond me. As a result I have amended the way I prepare food for myself and have shared what information I could with my friends who are now addressing how they feed their families. To have someone take years of research, condense and present it like she has takes great intelligence, patience, talent and passion. I now understand so much more about how what goes into my body transfers to my brain and organs – in a scientific, factual manner – as opposed to simply hearing ” you are what you eat” – and not really listening to it Delia was so approachable, friendly, professional and a joy to listen to - in fact I wanted more at the end – everyone did!’
