Purines are a natural substance found commonly in many foods, especially foods that are very high in protein, especially animal flesh. This is because purines are part of the structure of animal cells. Uric acid is formed in the body, when purines are broken down, and has some important functions to perform, but high uric acid levels can lead to sore joints, kidney problems and the most commonly know ‘acidic’ body symptom, gout.
Meat, specifically organ meat, as well as alcohol, yeast and some fish are high in purines, while complex, vegetable based carbohydrates, Essential Fatty Acids, high Vitamin C foods and green leafy vegetables, as well as ‘Beyond Greens’ provide low purine food choices.
